I am excited to announce a new feature on Pearls and Oysters that will be debuting soon – recipes of our favorite dishes from our favorite restaurants! If possible we will share the actual restaurant recipe in all its glory but we will also slightly reconfigure some of the instructions in case your kitchen is not outfitted with immersion circulators, combi ovens and sous vide baths. In other words, we will try to make the recipes accessible to the home cook while still retaining the chef’s magic.
We are delighted that our inaugural recipe will be from Michelin-starred and James Beard Award winner Chef Gabriel Kreuther from restaurant Gabriel Kreuther in New York City. We enjoyed a magical lunch there recently – all the details – and Chef Kreuther has shared his recipe for his famous Sturgeon and Sauerkraut Tart with us.
